If you follow me on Facebook, chances are you’ve seen me post looooooots of salad recipes lately. I can’t help myself. Right around spring and summer, new salads come out and they all look so delicious. Â Today’s Santa Fe Chicken Salad is no different – tasty, simple, refreshing and delicious!
One of the things I love about salads is that they are super easy to put together. Â You add a little bit of thing and a little bit of that and call it good. Â For Santa Fe Chicken Salad, here is what you need:
Those little white cubes? Jicama. Â I had no idea what jicama was or that it even existed until my Mom became obsessed with it years ago. Â It adds crunch to anything. Â There isn’t much flavor but if you like crunch, jicama is your friend.
I kinda feel like salad dressing is the star of most salads.  You can greatly change the flavor by what you pour on top.  Marzetti ®  has some new Simply Dressed Salad Dressings ® that are the bomb! (is that word still used? Either way you know what I mean if I say something is the bomb!) They are so so so so so so so good and add to the freshness of all types of salads.  I can use them on anything because they are made with simple ingredients. For this recipe I used the ranch dressing but I have ideas for all of the others pictured here.
The recipe itself is pretty self explanatory —
Santa Fe Chicken Salad
Ingredients
- 4 chicken breasts cooked then sliced
- 1 tbsp olive oil
- 1 head romaine lettuce chopped small
- 15 oz black beans drained and rinsed
- 15.25 oz whole kernel corn (corn on the cob can be used too!)
- 1 tomato chopped
- 1 avocado diced
- ½ cucumber diced
- ½ c red onion chopped
- ¼ c jack cheese
- ¼ c cheddar cheese
- ¼ small jicama diced
- Lemon-pepper
- crushed tortilla chips
- Ranch dressing
Instructions
- In a skillet, heat the oil.
- Add chicken and sprinkle generously with lemon-pepper.
- Cook each side about 7 minutes or until done. Remove from pan to cool.
- Slice the chicken.
- Prepare all ingredients and toss the salad.
- Don’t add the salad dressing until ready to serve.

I, like my Mom, like the crunch. Â Adding tortilla chips gives it the perfect crunch. Â You could make your own if you have the time but I just used store brought this time.
Mmmmm that dressing. Â Perfection. Â I’m kind of a ranch snob. Â I like it to be thick and ranchy. Â This one fits the bill for sure.
If you are feeling extra sassy, you can add a bit of fresh deli salsa to the dressing. Â It gives it a little kick.
