The air is crisp, the leaves are changing and it’s time to put on a sweater and boots. The only thing to complete my love of the fall is a nice, warm meal. You can have these easy to make Autumn Roasted Potatoes as a side to any dish this fall. They will warm you right up!
I made the roasted potatoes at an Albertsons and Vons and Pavilions Organic for All™ event in Chicago recently. We spent the day learning all about O Organics®, taking in a cooking demonstration, eating some delicious food and creating our own dishes. We arrived at Kendall College right on the Riverwalk and were welcomed with an awesome space, breakfast and all kinds of products to look at –
I had no idea that Albertsons, Vons and Pavilions has over 500 organic items while other grocery stories typically have 300 at the most. Did you know that? They are introducing 100 more new items this year and are priced at a value compared to leading national organic brands. We had such a fun day learning all about this line of organics. We had a cooking demonstration from dietitian Annessa Chumbley. She was so much fun and gave a ton of awesome tips.
After the cooking demo, we headed to the Rick Bayless Kitchen on campus and were challenged to make a dish in an hour.
We had a huuuuge selection of ingredients to choose from. I felt like I was on an episode of Chopped or something. But I was there with friends and it made it all the more fun.
I teamed up with Leigh Anne from Your Homebased Mom and Landee from LandeeLu. Leigh Anne had some plans for a frozen pizza from O Organics and I thought fall inspired roasted potatoes were the way to go. We gathered potatoes, seasonings, olive oil, an onion and pepper. I had the opportunity to work with a vast selection of O Organics products, but please check your local Albertsons family store to see what’s available in your area.
I also learned from the dietician, Annessa, that onions are great immune boosters. I had no clue. But they sure give things a lot of flavor. We added some chopped up to our potatoes.
We used O Organics Extra Virgin Olive Oil, Black Pepper and Italian Seasoning (not pictured here). These Autumn Roasted Potatoes would complete any meal this fall!
Autumn Roasted Potatoes
Ingredients
- 2 lbs red potatoes quartered
- â…“ c olive oil
- ½ onion chopped
- 1 yellow pepper chopped (green and red can be used as well)
- 1 tsp Italian Seasoning
- ½ tsp black pepper
Instructions
- Preheat oven to 425 degrees.
- Place quartered red potatoes, onions and peppers on baking sheet.
- Sprinkle seasonings.
- Drizzle with olive oil.
- Bake for approximately 30-40 mins until golden brown, stirring at 15 minutes to make sure even cooking.

Is there anything better than spending time in the kitchen with friends, making good food and having someone else clean up? I think not..
Leigh Anne’s frozen pizza from O Organics looked and tasted like a million bucks. Everyone was ooohing and ahhhing over it.
