Sweets Version Gift: Homemade Peppermint Oreos

Yesterday I posted my super duper easy non-sweet simplest gift idea ever..today I’m back with a sweet one. But still simple. These would be great for a cookie exchange or neighbor gift. Or for yourself, just because you need a treat to get through the next few crazy weeks…. Because yum- peppermint!
Homemade Peppermint Oreos
  • 1 package of devil's food cake mix
  • 2 eggs
  • ¾ cup of shortening
  • 8 oz. cream cheese
  • ½ stick of butter, softened
  • 1 tsp. vanilla
  • 1 tsp. peppermint (not mint)
  • 4 c. powdered sugar
  • Mix until smooth.
  1. Mix together.
  2. The dough will be pretty stiff-
  3. it's supposed to be that way.
  4. Roll into balls and put on baking sheet.
  5. Make them little balls (like 1").
  6. They cook more evenly that way.
  7. Bake at 350 degrees for 8 minutes.
  8. Immediately transfer to a cooling rack.
  9. When cookies are cool, frost them and then
  10. sandwich them like an Oreo.
  11. This will only make about 12 cookies total
  12. depending on how big you make them.
If you'd rather make traditional oreos,
omit the peppermint and add another tsp of vanilla instead.

For you non-chocolate fans out there: (I am not a chocolate fan- can we still be friends?) I decided to make a vanilla version. Instead of using devil’s food cake, I used a yellow cake mix.  They taste sorta similar to Trader Joe’s vanilla jo jo’s.

While the cookies were baking, I put my preschooler to work:

Unwrapping candy canes and smashing them in a sandwich baggie.
He took his job very seriously (tongue out= hard work).

I then dipped the homemade oreos
into the crushed candy canes.

These were my practice ones, so they don’t look very pretty.
But trust me, they tasted good!

    Do you have to use shortening? I try to avoid it… would butter or something similar work just as well? Love peppermint oreos! Can’t wait to try.
