Ingredients

  • 1 c butter (2 sticks) softened
  • 1 c brown sugar
  • ½ c white sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 ½ c all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 3 c rolled oats
  • 1 c raisins
  • 1 c crushed toffee bits

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl or mixer, cream together the butter and sugars.
  • Add eggs one at a time and beat, then add vanilla.
  • Combine flour, baking soda, cinnamon and salt.
  • Gradually add into wet mix.
  • Blend in oatmeal, raisins and toffee bits.
  • Drop spoonfuls onto baking sheet.
  • Bake for 10 to 12 minutes (oven time will vary based on size).
  • Let cookies cool on baking sheet for 5 minutes.
  • Transfer to cooling rack.
