- 1 c butter (2 sticks) softened
- 1 c brown sugar
- ½ c white sugar
- 2 eggs
- 1 tbsp vanilla extract
- 1 ½ c all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- 3 c rolled oats
- 1 c raisins
- 1 c crushed toffee bits
Preheat oven to 350 degrees.
In a large bowl or mixer, cream together the butter and sugars.
Add eggs one at a time and beat, then add vanilla.
Combine flour, baking soda, cinnamon and salt.
Gradually add into wet mix.
Blend in oatmeal, raisins and toffee bits.
Drop spoonfuls onto baking sheet.
Bake for 10 to 12 minutes (oven time will vary based on size).
Let cookies cool on baking sheet for 5 minutes.
Transfer to cooling rack.
