Ingredients

  • 2 eggs
  • 15-20 Triscuit crackers turned into fine crumbs (panko breadcrumbs could be used)
  • 3 medium zucchini cut (as outlined below)
  • ½ c parmesan cheese fresh shredded

Dipping Sauces:

  • Ranch dressing
  • Ranch + bbq sauce
  • Mayonnaise + ketchup or hot sauce

Instructions

  • Preheat the oven to 425 degrees.
  • Line a baking sheet with parchment paper, tin foil or spray with baking spray/olive oil.
  • Beat eggs in one bowl.
  • Finely crush Triscuit crackers (I used my mini food processor - so easy!). Or substitute panko breadcrumbs. Place into separate shallow bowl.
  • Cut zucchini into sticks - cut in half, then slice down each ½ two more times until you have sticks.
  • Dip sticks into egg and then into “bread crumbs.”
  • Place on baking sheet.
  • Bake for 15-20 minutes (oven times vary depending on the size of your zucchini sticks).
  • Serve with dipping sauces.

Dipping Sauces:

  • Serve with ranch dressing or mix ranch dressing with barbecue sauce. Mix equal parts mayo with ketchup or a small amount of hot sauce.
