- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 c onion chopped
- 1 c mushrooms sliced
- 14.5 oz diced tomatoes drained
- 24 oz marinara sauce
- 8 oz light mozzarella cheese shredded
- 8 oz uncooked whole wheat penne pasta
Preheat oven to 350 degrees.
Brown ground turkey in a pan and set aside.
In the same pan, add olive oil and saute onions and mushrooms.
Add turkey back with diced tomatoes and marinara sauce.
Bring to boil, lower heat and simmer for 10-15 minutes.
Spread a thin layer of sauce into bottom of 9x13 pan.
Add uncooked pasta.
Add another layer of sauce and then sprinkle with cheese.
Cover with foil.
Bake for 45-50 minutes.
Remove and let stand with foil still on for 15 minutes.
Serve!
