Ingredients

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 c onion chopped
  • 1 c mushrooms sliced
  • 14.5 oz diced tomatoes drained
  • 24 oz marinara sauce
  • 8 oz light mozzarella cheese shredded
  • 8 oz uncooked whole wheat penne pasta

Instructions

  • Preheat oven to 350 degrees.
  • Brown ground turkey in a pan and set aside.
  • In the same pan, add olive oil and saute onions and mushrooms.
  • Add turkey back with diced tomatoes and marinara sauce.
  • Bring to boil, lower heat and simmer for 10-15 minutes.
  • Spread a thin layer of sauce into bottom of 9x13 pan.
  • Add uncooked pasta.
  • Add another layer of sauce and then sprinkle with cheese.
  • Cover with foil.
  • Bake for 45-50 minutes.
  • Remove and let stand with foil still on for 15 minutes.
  • Serve!
