Roasted Pepper Soup

Ingredients

  • 3 c Chicken stock
  • 14 oz Lite Coconut Milk
  • 1 c Sliced yellow onion
  • 3 Cloves Garlic
  • 3-4 Peppers (any color)
  • 1 tbsp Grapeseed oil
  • Salt and Pepper to taste
  • Cornstarch and water

Instructions

  • Roast peppers in oven at 350 degrees for 30-40 minutes or until collapse.
  • Saute onions and garlic in a soup pot until soft.
  • Add 2 c chicken stock and bring soup to a simmer.
  • When peppers are done, remove from oven and remove stems.
  • Add peppers to soup and simmer for about 20 minutes .
  • Blend soup to smooth texture.
  • Strain soup to remove seeds and skin, add coconut milk and return to a simmer.
  • Thicken with cornstarch and water.
  • Add salt and pepper to taste.
