Brazilian Cheese Bread

  • 1 egg at room temperature (best to start with room temperature egg)
  • c olive oil
  • c milk
  • 1 ½ c tapioca flour
  • ½ c grated cheese (your preference but I used cheddar cheese)
  • 1 tsp salt


  • Preheat oven to 400°F.
  • Spray olive oil around the insides of each well of a mini-muffin tin.
  • In a blender, combine the egg, oil, milk, flour and salt.
  • Process until the mixture is smooth, scraping down the sides of the blender once or twice.
  • Add the cheese and blend for just a little bit, until the cheese is mixed in throughout the batter.
  • Pour batter into prepared mini-muffin tin, leaving a little room at the top.
  • Bake in the oven for 15-20 minutes, until lightly browned. Do NOT over bake.
  • Remove from oven and let cool on a rack for a few minutes before serving.
  • Best served warm!
