- 1 egg at room temperature (best to start with room temperature egg)
- ⅓ c olive oil
- ⅔ c milk
- 1 ½ c tapioca flour
- ½ c grated cheese (your preference but I used cheddar cheese)
- 1 tsp salt
Preheat oven to 400°F.
Spray olive oil around the insides of each well of a mini-muffin tin.
In a blender, combine the egg, oil, milk, flour and salt.
Process until the mixture is smooth, scraping down the sides of the blender once or twice.
Add the cheese and blend for just a little bit, until the cheese is mixed in throughout the batter.
Pour batter into prepared mini-muffin tin, leaving a little room at the top.
Bake in the oven for 15-20 minutes, until lightly browned. Do NOT over bake.
Remove from oven and let cool on a rack for a few minutes before serving.
Best served warm!
