Mexican Breakfast Casserole

This Mexican Breakfast Casserole is a yummy combination of bread, cheese and spice. It's the perfect dish to bring to a potluck or brunch!

Ingredients

  • 20 oz Chorizo sausage
  • 1 loaf french bread cut into 1" cubes to equal about 8 cups
  • 4 eggs
  • 2 c half and half
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 oz diced green chilies
  • 2 c shredded cheese divided

Instructions

  • Cook Chorizo sausage in a skillet over medium-high heat, stirring occasionally until completely browned, about 5-8 minutes.
  • Using a slotted spoon, remove the sausage from the skillet and place on a paper towel lined plate. Set aside to drain.
  • Cut up loaf of bread into 1" cubes to make 8 cups. Place in a large bowl. Set aside.
  • Crack 4 eggs in a small bowl and beat well.
  • Mix in 2 cups of half and half, ½ tsp cumin, ½ tsp salt and ¼ tsp pepper.
  • Pour egg mixture over bread cubes.
  • Add sausage, diced green chilies and 1 ¼ c of shredded cheese. Mix everything well.
  • Pour into a greased 9x13 and sprinkle ¾ c shredded cheese over the top.
  • Bake at 350 degrees for 30-35 minutes or until casserole is set in the middle.
  • Allow to cool for 10-15 minutes before serving.
