Crust:
- 1 sleeve of graham crackers crushed
- 4 tbsp butter (½ of a cube), melted
- 1 tbsp sugar
Cheesecake Filling:
- 16 oz cream cheese softened
- ½ c powdered sugar
- 1 tsp fresh lemon juice
- ½ tsp vanilla extract
- 12 oz key lime pie Yoplait Original (others can be substituted for variety)
- ¼ c sour cream
- 1 tbsp sugar
Crust
Combine the crushed graham crackers, sugar and butter.
Evenly distribute the mix into the bottom of muffin tins, ramekins, bowls, etc. (I used 6 small cute paper containers)
Cheesecake Filling
In a medium bowl, beat cream cheese and powdered sugar until creamy.
Add lemon juice and vanilla.
Add yogurt and beat.
Add sour cream and sugar.
Beat until fluffy.
Spread cheesecake filling over graham cracker crust.
Sprinkle with crushed graham crackers and garnish with lime wedges if desired.
