Ingredients

  • 2 lbs red potatoes quartered
  • c olive oil
  • ½ onion chopped
  • 1 yellow pepper chopped (green and red can be used as well)
  • 1 tsp Italian Seasoning
  • ½ tsp black pepper

Instructions

  • Preheat oven to 425 degrees.
  • Place quartered red potatoes, onions and peppers on baking sheet.
  • Sprinkle seasonings.
  • Drizzle with olive oil.
  • Bake for approximately 30-40 mins until golden brown, stirring at 15 minutes to make sure even cooking.
