- ½ c sugar
- ½ c butter
- 1 c caramel corn chopped
- 1 egg
- ½ tsp almond extract
- ¾ c all purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ½ c quick cooking oats
Preheat oven to 350 degrees.
Line 2 cookie sheets with parchment paper.
In a bowl beat sugar and butter until light and fluffy.
Add in ⅓ c chopped caramel corn and egg.
Mix with a spoon, not your mixer (or the caramel corn will be broken down too much).
Add in extract, flour, baking powder, baking soda and the remaining ⅔ c caramel corn.
Stir in oats.
Form into balls and bake for 10-12 minutes or until golden brown around edges.
