Snickerdoodle Blondies

  • 3/4 c butter softened
  • 1 c sugar
  • 1/2 c brown sugar packed
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 c all purpose flour
  • 1 tsp ground cinnamon
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1 TBSP cinnamon sugar mix


  • Preheat oven to 350°.
  • Grease 9x9" or 8x11" pan with cooking spray. 
  • Beat butter and both sugars until fluffy.
  • Add eggs one at a time and vanilla and beat until combined. 
  • In a separate bowl, combine flour, cinnamon, baking powder, and salt.
  • Add dry ingredients to wet and mix until combined.
  • Press batter into prepared pan with hands or the back of a buttered spoon. 
  • Sprinkle cinnamon sugar on top.
  • Bake until golden brown for 25 to 30 minutes. 
  • Let cool for at least 10 minutes before cutting into squares and serving.
