Crepes
- 2 eggs
- 2 c milk
- 1 tbsp sugar
- ½ tsp salt
- 2 c flour
- 2 tbsp oil
Cinnamon Apple Syrup
- 2 tart apples i.e., Granny Smith
- ½ c white sugar
- 1 tbsp cinnamon
- 2 tbsp water
Filling
- 1 Salted Caramel Pretzel Mix Ins
- 1 c whipped cream like Cool Whip
Crepes
Whisk eggs, milk, sugar and salt.
Slowly start stirring in flour, adjusting as you go.
Stir in oil.
Let sit for 15 minutes.
Rub oil on pan if not using crepe maker.
Use a small cup (start with ¼ c) to pour batter into the pan and tilt in a circular motion to cover the pan in a thin layer.
Cook for approximately 2 minutes until brown on one side, flip and cook for just 30 more seconds.
Cinnamon Apple Syrup
In a saucepan, combine the apples, sugar, cinnamon and water.
Stir to dissolve sugar, and bring to a boil.
Reduce the heat to low, and simmer for 10 minutes, or until apples are soft and syrup has thickened.
To compile crepes
Spread filling into middle of crepe, roll and then top with cinnamon apple syrup and pretzels/crunchy bits from the Yoplait Mix Ins.
Top with vanilla ice cream and powdered sugar if desired!
