  • 17.5 oz Betty Crocker sugar cookie mix pouch
  • ½ c butter (1 stick)
  • 1 egg


  • 3 oz cream cheese softened
  • 1/4 c butter (½ stick) softened
  • 1/4 tsp lemon extract
  • 2 c powdered sugar
  • lemon for garnish


  • Combine sugar cookie mix, butter and egg and mix until incorporated.
  • Place approximately 1/4 cup cookie dough in well greased muffin tins.
  • Press down gently by hand until dough is flat and smooth against the edges of the muffin tin cups.
  • Bake at 350 for 10-12 minutes.
  • Let cool on cooling rack for 10 minutes before removing.
  • While the cookies cool completely, make the frosting.
  • Combine softened cream cheese and butter in mixer and beat unit blended.
  • Add powdered sugar and lemon extract and beat again.
  • When cookie cups are completely cooled, fill with frosting and garnish to your liking.


This makes 12-18 if you are using a regular muffin pan and about 3 dozen if you are using a mini muffin tin.
