Bread:
- 2 c all-purpose flour
- ¾ c sugar
- 1 ½ tsp baking powder
- ¾ tsp salt
- ½ tsp baking soda
- ¼ c butter softened
- 1 tbsp orange zest
- ¾ c orange juice
- 1 egg
- 1 c cranberries chopped (fresh)
Glaze:
- 3 tbsp orange juice
- 1 c powdered sugar sifted
Preheat oven to 350 degrees.
Grease/spray bottom of loaf pan.
Combine flour, sugar, baking powder, salt, and baking soda.
Add butter and mix until crumbly.
Add peel, ¾ c orange juice, and egg.
Stir until moistened (it will be thick) and add cranberries.
Pour batter into pan and bake for approximately 45 minutes (until a knife comes clean from the center).
Loosen sides from pan and cool completely.
Make the glaze by mixing 3 tbsp orange juice with 1 c sifted powdered sugar.
Drizzle over top of loaf and enjoy!
