  • 2 c all-purpose flour
  • ¾ c sugar
  • 1 ½ tsp baking powder
  • ¾ tsp salt
  • ½ tsp baking soda
  • ¼ c butter softened
  • 1 tbsp orange zest
  • ¾ c orange juice
  • 1 egg
  • 1 c cranberries chopped (fresh)


  • 3 tbsp orange juice
  • 1 c powdered sugar sifted


  • Preheat oven to 350 degrees.
  • Grease/spray bottom of loaf pan.
  • Combine flour, sugar, baking powder, salt, and baking soda.
  • Add butter and mix until crumbly.
  • Add peel, ¾ c orange juice, and egg.
  • Stir until moistened (it will be thick) and add cranberries.
  • Pour batter into pan and bake for approximately 45 minutes (until a knife comes clean from the center).
  • Loosen sides from pan and cool completely.
  • Make the glaze by mixing 3 tbsp orange juice with 1 c sifted powdered sugar.
  • Drizzle over top of loaf and enjoy!
