Over the last few months I’ve had the chance to reflect on parenting and highlighting ways that people are #doingood, thanks to Minute Maid. As I’ve mentioned before, I feel so fortunate to be a part of this campaign. When life is crazy and stressful and overwhelming, taking the time to remind myself that I’m doing ok (or more than just ok) and that others around me are awesome, has been so rewarding. One of the ways that I show love to people is by making treats and delivering them. I might not say the right thing but people feel my love and encouragement when I drop off goodies at their doorstep. I love making printables and writing notes with the treats we deliver. I’ve passed that on to my kids. Sometimes they roll their eyes at me or complain that they don’t get a treat because it’s meant for someone else. But I hope as they grow older they will see that when you put good in, you get good out.

Cranberry Orange Bread
Ingredients
Bread:
- 2 c all-purpose flour
- ¾ c sugar
- 1 ½ tsp baking powder
- ¾ tsp salt
- ½ tsp baking soda
- ¼ c butter softened
- 1 tbsp orange zest
- ¾ c orange juice
- 1 egg
- 1 c cranberries chopped (fresh)
Glaze:
- 3 tbsp orange juice
- 1 c powdered sugar sifted
Instructions
- Preheat oven to 350 degrees.
- Grease/spray bottom of loaf pan.
- Combine flour, sugar, baking powder, salt, and baking soda.
- Add butter and mix until crumbly.
- Add peel, ¾ c orange juice, and egg.
- Stir until moistened (it will be thick) and add cranberries.
- Pour batter into pan and bake for approximately 45 minutes (until a knife comes clean from the center).
- Loosen sides from pan and cool completely.
- Make the glaze by mixing 3 tbsp orange juice with 1 c sifted powdered sugar.
- Drizzle over top of loaf and enjoy!
