Ingredients

  • 3 c brown rice

Beans

  • 15 oz black beans drained & rinsed
  • 1/4 c water
  • chili powder
  • cumin

Chicken

  • 1 lb chicken breasts
  • chili powder
  • cumin
  • oregano
  • onion powder
  • garlic salt
  • oregano
  • cayenne pepper

Toppings (all optional)

  • lettuce
  • avocado
  • sour cream light
  • baked corn tortilla chips crushed
  • salsa
  • cheese low fat mozzarella or cheddar
  • cilantro

Instructions

  • Follow directions on the package to make 3 c brown rice.

Beans:

  • Rinse and drain black beans.
  • Warm in a saucepan with 1/4 c water on low.
  • Season with seasonings to taste.

Chicken:

  • Cut chicken into bite-sized pieces, season with spices.
  • Saute in pan until cooked through.
  • Assemble-Brown rice, black beans, chicken and toppings. Enjoy!
