Mom's Classic Potato Salad
My Mom’s Classic Potato Salad is a simple but delicious potato salad to serve with any main dish. It's perfect on a warm summer's day but can be made throughout the year too.

- 5-6 medium potatoes (brown or red)
- 2 eggs hard boiled
- ¼ c sweet relish
- 2 stalks celery sliced
- 2.25 oz sliced olives
- ½ green pepper chopped (optional)
- ½ c mayo
- 1 tsp mustard
- 2 green onions (optional)
- salt & pepper to taste
Boil potatoes with skins on until soft (approximately 45 mins). Drain.
Cool potatoes for about an hour. Peel.
Boil eggs for approx 12 minutes.
Cut potatoes and eggs.
Mix in all other ingredients.
Refrigerate 1 hour before serving.
