Cook Chorizo sausage in a skillet over medium-high heat, stirring occasionally until completely browned, about 5-8 minutes.
Using a slotted spoon, remove the sausage from the skillet and place on a paper towel lined plate. Set aside to drain.
Cut up loaf of bread into 1" cubes to make 8 cups. Place in a large bowl. Set aside.
Crack 4 eggs in a small bowl and beat well.
Mix in 2 cups of half and half, ½ tsp cumin, ½ tsp salt and ¼ tsp pepper.
Pour egg mixture over bread cubes.
Add sausage, diced green chilies and 1 ¼ c of shredded cheese. Mix everything well.
Pour into a greased 9x13 and sprinkle ¾ c shredded cheese over the top.
Bake at 350 degrees for 30-35 minutes or until casserole is set in the middle.
Allow to cool for 10-15 minutes before serving.
