This Mexican Breakfast Casserole is easy to make and has a little kick to it. You have to try it!
Brittany from Bebe a la Mode is here to share this one with you. This is a variation of a casserole that they make at Christmas time. It’s cheesy, bready and a little spicy all in one.
We start with 20 0z. of Chorizo sausage. They either come in links or in tubes like this:
If you purchase them in links, cut the casing and squeeze out the sausage.
Cook up the sausage in a skillet over medium-high heat, stirring occasionally until completely browned, about 5-8 minutes. Using a slotted spoon, remove the sausage from the skillet and place on a paper towel lined plate. Set aside to drain.
Cut up a nice, crusty loaf of bread into 1″ cubes to make 8 cups.
Place in a large bowl. Set aside.
Next, crack 4 eggs in a small bowl and beat well. Mix in 2 cups of half and half, 1/2 tsp. cumin, 1/2 tsp. salt and 1/4 tsp. pepper.
Pour egg mixture over bread cubes.
Add sausage, one 4 oz can of diced green chilies and 1 1/4 c. of shredded cheese and toss until well mixed.
Pour into a greased 9×13 and sprinkle 3/4 c. shredded cheese over the top.
Bake at 350 degrees for 30-35 minutes or until casserole is set in the middle. Allow to cool for 10-15 minutes before serving.
Cut into squares and garnish with green onions.
This is the perfect thing to take to a potluck or brunch. Or to make up a day in advance and pop in the oven in the morning. Or even serve for dinner with a nice green salad.

- 4 eggs
- 2 c half and half
- ½ tsp cumin
- ½ tsp salt
- ¼ tsp pepper
- 4 oz diced green chilies
- 2 c shredded cheese divided
