Cinnamon Pecan Coffee Cake

This Cinnamon Pecan Coffee Cake is absolutely delicious. This cake makes eating cake for breakfast an acceptable thing to do!

Ingredients

  • 15.25 oz yellow cake mix
  • 3.4 oz vanilla pudding mix
  • ½ c oil
  • 1 c water
  • 4 eggs
  • 1 tsp vanilla
  • 1 tsp butter extract

Topping:

  • ½ c sugar
  • 2 tsp cinnamon
  • ½ c chopped pecans

Instructions

  • Place all ingredients into a the mixing bowl of a stand mixer and mix at medium speed for 3 minutes.
  • Spray a bundt pan with baking spray.
  • Sprinkle cinnamon and sugar mixture into the bottom of the pan.
  • Pour half of the batter into the bundt pan, then sprinkle generously with cinnamon and sugar.
  • Sprinkle pecans on top of the cinnamon and sugar.
  • Next, pour in remaining batter and top with remaining cinnamon and sugar.
  • Bake at 350 degrees for 40-45 minutes until a toothpick inserted into the center comes out clean.
  • Let the cake cool, then flip out onto a serving plate, slice up and enjoy!
