Hi everyone! It’s Emma from Crafting{E} again, I am so excited to be back sharing this delicious recipe for a Cinnamon Pecan Coffee Cake.
I am definitely a breakfast food lover. If I could only eat breakfast food for the rest of life, I would have no complaints at all. And really, in what other meal can you get away with eating super sugary treats as the main course.
This Cinnamon Pecan Coffee Cake is no exception, it is absolutely delicious. This cake makes eating cake for breakfast an acceptable thing to do.

Cinnamon Pecan Coffee Cake
Ingredients
- 15.25 oz yellow cake mix
- 3.4 oz vanilla pudding mix
- ½ c oil
- 1 c water
- 4 eggs
- 1 tsp vanilla
- 1 tsp butter extract
Topping:
- ½ c sugar
- 2 tsp cinnamon
- ½ c chopped pecans
Instructions
- Place all ingredients into a the mixing bowl of a stand mixer and mix at medium speed for 3 minutes.
- Spray a bundt pan with baking spray.
- Sprinkle cinnamon and sugar mixture into the bottom of the pan.
- Pour half of the batter into the bundt pan, then sprinkle generously with cinnamon and sugar.
- Sprinkle pecans on top of the cinnamon and sugar.
- Next, pour in remaining batter and top with remaining cinnamon and sugar.
- Bake at 350 degrees for 40-45 minutes until a toothpick inserted into the center comes out clean.
- Let the cake cool, then flip out onto a serving plate, slice up and enjoy!
