Gingerbread Cookie Mix

Gingerbread cookies are a bit nostalgic for me. Growing up, there was an elderly lady, Mrs. Bates, who lived close to our neighborhood and every Christmas she baked fresh gingerbread man cookies. We would knock on her door and she would cheerfully greet us and send us on our way with a fresh cookie.

It was like Halloween at Christmas.

Except with gingerbread.

So everytime I make or eat gingerbread cookies, I think of sweet Mrs. Bates.

In honor of my dear neighbor and in the spirit of giving, today I’m sharing a recipe to make and give away.

Gingerbread Cookie Mix goes a little something like this:

In a one-quart mason jar, layer in the ingredients in the following order, packing down each layer:

1 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. brown sugar
2 tsp. ginger
1 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. cloves
1 1/2 c. flour
1/2 c. brown sugar

Secure the lid and tie on instructions along with a cookie cutter, if desired.

Instructions:

Cream together 1/2 cup butter (1 stick), 3/4 cup molasses and 1 egg. Blend in the Gingerbread Cookie Mix. Stir until well blended. Cover and refrigerate for 1 hour.  Roll out dough to 1/4″ on a lightly floured surface. Using cookie cutters, cut out shapes and place on a greased cookie sheet. Bake at 350 degrees for 10-12 minutes.

Gingerbread Cookies

Ingredients

  • 1/2 c. (1 stick) butter, at room temp
  • 3/4 c. molasses
  • 1 egg
  • 3 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. brown sugar
  • 2 tsp. ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1/4 tsp. cloves

Instructions

  • Cream butter, molasses and egg together.
  • Add remaining dry ingredients and mix well.
  • Wrap in plastic wrap and refrigerate for at least one hour.
  • On a floured surface, roll out dough to 1/4".
  • Using cookie cutters, cut out shapes and place on a greased cookie sheet.
  • Bake at 350 degrees for 10-12 minutes.
