When I was a kid I couldn’t stand zucchini. I actually didn’t love most vegetables. My Mom would make them for a side dish and I’d choke them down. I’m not sure when it happened but I fell in love and now I make them for my family a lot. Today’s recipe is a super easy, 4 ingredient one. It could be eaten as a side dish or an appetizer for a party. And I even used a secret ingredient!
Like I mentioned- this is easy peasy. All you need is a few ingredients and you are good to go! The sauces are fun to switch things up a little. You can use all of them or none of them. Your call.
4 Ingredient Baked Zucchini Sticks + Dipping Sauces
Ingredients
- 2 eggs
- 15-20 Triscuit crackers turned into fine crumbs (panko breadcrumbs could be used)
- 3 medium zucchini cut (as outlined below)
- ½ c parmesan cheese fresh shredded
Dipping Sauces:
- Ranch dressing
- Ranch + bbq sauce
- Mayonnaise + ketchup or hot sauce
Instructions
- Preheat the oven to 425 degrees.
- Line a baking sheet with parchment paper, tin foil or spray with baking spray/olive oil.
- Beat eggs in one bowl.
- Finely crush Triscuit crackers (I used my mini food processor - so easy!). Or substitute panko breadcrumbs. Place into separate shallow bowl.
- Cut zucchini into sticks - cut in half, then slice down each ½ two more times until you have sticks.
- Dip sticks into egg and then into “bread crumbs.”
- Place on baking sheet.
- Bake for 15-20 minutes (oven times vary depending on the size of your zucchini sticks).
- Serve with dipping sauces.
Dipping Sauces:
- Serve with ranch dressing or mix ranch dressing with barbecue sauce. Mix equal parts mayo with ketchup or a small amount of hot sauce.

The secret ingredient for this recipe is Triscuit crackers. They are easily substituted for breadcrumbs and have just enough salt and flavor to make them perfect. There are several varieties that would give these zucchini sticks even more punch. To make your own Triscuit cracker breadcrumbs: add 15-20 to a mini food processor and pulse. Or you can place them in a zip bag and use a rolling pin to smash them until they are fine “breadcrumbs.”

You’ve got to try this recipe! Instead of sticks you could also cut them into regular round circles and have them be more like baked zucchini chips. I liked them as spears but you can do whatever you’d like.
