This Strawberry Spinach salad is light, refreshing and sweet. It’s perfect for the new year!
Hello Thirty Handmade Days readers! It’s Emma from Crafting{E}! With the arrival of the new year it’s a perfect time to form new healthy habits. Over the past couple of years I’ve worked really hard to cut out added sugars and unhealthy foods.
I recently started making this delicious {guilt free} salad and it is one of my favorite things to eat now.
This consists of spinach, strawberries, pecans, cranberries, and mandarin oranges all topped with a delicious strawberry dressing. It’s seriously SO easy to make too.
Also, for those of you with dairy and gluten food allergies (like me), the salad and dressing are free from these foods.
This salad is SO delicious. Seriously, after not having added sugar for so long this salad tastes like a sweet treat!
Delicious (and healthy) Strawberry Spinach Salad
Ingredients
FOR THE SALAD:
- 6-8 c spinach
- 1-2 c strawberries (sliced)
- 15 oz mandarin oranges or a fresh orange
- ½ c dried cranberries
- ½ c pecan pieces
FOR THE DRESSING:
- ¼ c apple cider vinegar
- ¼ c honey
- ½ tsp salt
- ½ tsp ground mustard
- ½ c avocado oil (you can also use olive oil but I prefer avocado)
- 2-3 strawberries (whole)
Instructions
- Mix all of the salad ingredients together.
- Blend all the ingredients for the dressing in a blender until combined.
- Pour the dressing onto the salad and enjoy!
