It’s Emma from Crafting{E} again! I hope everyone had a wonderful Christmas and a great New Years! Now that it is 2016, it seems like everyone has a resolution to eat healthier, exercise, etc. I know that I haven’t been as good with my eating this holiday season and am definitely ready to restart.
Healthy eating can be hard. It feels like these days all store packaged foods (even the ones claiming to be healthy) have ingredients that are bad for our bodies.
Last year I found out that I am lactose intolerant. I eliminated sugar, dairy, and wheat from my diet so that I stopped feeling super sick to my stomach all the time. It was hard a lot of times to find things that I could eat that would give me energy and protein.
One of my favorite snacks (especially post-workout) are these delicious energy bites. Guys, these things are seriously delicious. The consistency is like cookie dough, but are healthy (it doesn’t get better than that!).Me and my mom have tried many different recipes for these, but couldn’t find one that was perfect. We ended up creating this recipe. It is super simple, easy, and the ingredients are things you probably already have on hand.
One thing me and my mom noticed is that all the recipes had you puree your own vegetables, but instead we use baby food to save time. Yes, it’s more expensive but it makes these bites A LOT easier to make.
5 Ingredient Energy Bites
Ingredients
- 16 oz sweet potato baby food
- 4 oz carrot baby food
- 1 c peanut butter
- 3 c oatmeal
- 1-2 c mini chocolate chips (I used dairy-free ones, but feel free to use whatever you want)
Instructions
- Simply mix the ingredients together and form them into little balls.
- You can either refrigerate the power bites or freeze them. I like them better when they are frozen.
