One of my favorite things about Christmas is all the baking that goes on. We have some recipes in my family that have been made for generations during the Christmas season. Because we bake them every year at Christmas, it just feels so much like Christmas when we make and eat them.
Some of the recipes we make for Christmas aren’t the yummiest desserts ever, but these date balls are delicious. This date ball recipe has been made in my family for as long as I can remember. They are a very uncommon recipe that most people have forgotten about it, but I’m here to bring it back ;)!!
Not only are these cookies super yummy but they are EXTREMELY EASY. I don’t know about you but I call 6 ingredients and 3 steps pretty easy. They don’t require any baking and only take 15 minutes to assemble! These cookies are perfect for putting on dessert plates to give out to the neighbors or even to bring to a party!
Now onto the part you’ve been waiting for….. THE RECIPE!!
Date Ball Cookie Recipe
Ingredients
- ½ c butter
- 8 oz chopped dates
- 1 c sugar
- 1 egg beaten
- 2 c rice krispies
- Shredded coconut
Instructions
- Combine all ingredients except rice krispies in a saucepan and cook and stir for 7 minutes.
- Remove from heat and add 2 c rice krispies.
- Form into small balls and roll in coconut.

PS- For the comments posted before mine, if you reread her instructions, ” 1 Package Chopped Dates ” are in the ingredients section, her instructions read to include EVERYTHING in the ingredients EXCEPT Rice Crispies, which means to include the Dates in the saucepan with the sugar, etc.
PPS- YES, this recipe is complete and she DID NOT OMIT anything!

This is not a complete recipe. It’s missing the cut up dates, and not sure if there are other omitted items. Also, the directions say to mix at ingredients in the saucepan. If you did that, then you would need to omit the last two steps of adding the rice Krispies and rolling in coconut. This is a better recipe to use. These cookies are delicious.
