Last month our family life changed when my husband started law school. It’s been a goal of his since before we met but it never felt like the right time. Pretty much…there is no right time and we decided it was now or never. So for the next four years he’ll be working hard full time and doing school mainly at night. I’ll be juggling the rest. It’s a little overwhelming for all of us. I reached out on Facebook to ask for help with easy dinner recipes to have one less thing to worry about at night. I was thrilled with the response I got- thank you! People asked me to share those recipes and I finally got around to gathering them all together. There were several on that thread with actual recipes that I plan on making and will share here too.

It leaves room to change ingredients for low calorie options or to omit ones you don’t like (I don’t use onions, my kids and I don’t like them).

I hate that the “easy” meals are always so unhealthy. I see recipes going around Pinterest all the time and I am appalled at how much cream, cheese, butter, and processed ingredients are in them. Don’t get me wrong- I love cheese, butter and cream as much as the next gal. But I don’t want it in every meal and in abundance….okay, well I DO WANT it but I won’t let myself eat it all the time. We only get only body- we need to take care of it.
I love that you have compiled this list and I am curious to read about your families experience with these meals as I too need to come up with some good, easy, fun meals for my family now that school is back in session. I have been a bad cook lately- or lazy cook I should say.

One way to make these recipes healthier is to reduce the portion to each person and add a green salad to the meal. Done!

This is true but much better than the take out and fast food many busy people pick up. This is much better than whatever they’d pick up at McDonald’s. Stick to one portion and add a veggie on the side- ouila!
