I’m excited to share the easiest Lemon Cookies from a Cake Mix recipe and coordinating printable today!
You know the old saying- when life gives you lemons, make lemonade? We’ve had some pretty lemon-y circumstances lately in my family. My Dad was diagnosed with the big, awful C word last month. Liver Cancer. My happy, smiley, most favorite Dad on the planet….has gone downhill quickly. I’ve always been a Daddy’s girl. It’s been hard. For this month’s blog hop I made some lemon cookies with this cute little printable. I figured surely I’m not the only one that has challenges. How great would these be to deliver to someone in your life that is struggling? I know I’d LOVE it. I don’t have all the answers when it comes to challenges but I know that two things have helped beyond belief- my faith (and prayers) and having supportive family and friends. A close third has been treats. Juuuuuust kidding. Ish.
These cookies are the easiest ever. They are cheater cake mix ones. So simple but my family gobbles them down. Win-win!

Lemon Cake Mix Cookies
Lemon Cake Mix Cookies
Ingredients
- 15.25 oz lemon cake mix
- 2 eggs
- ⅓ c vegetable oil
- 1 tsp lemon extract
- powdered sugar
Instructions
- Preheat oven to 375 degrees.
- Pour cake mix into a large bowl.
- Stir in eggs, oil, and lemon extract until well blended.
- Drop teaspoonfuls of dough into a bowl of powdered sugar.
- Roll them around until they're lightly covered.
- Once sugared, put them on an ungreased cookie sheet.
- Bake for 6 to 9 minutes in the preheated oven (I baked mine for 9 mins).
- Don't overcook.

I’m so sorry about your dad! We found out about my dad’s cancer last January. He put up a great fight through 3 rounds of chemo, but it was too much and no matter what the doctors do, the cancer is winning the battle. It’s very sad, but glad we could all be together recently. I’m going to bake up some of these cookies to send to dad and mom to cheer them up, even just for a little bit. Thanks so much for sharing! I completely understand the importance of friends at times like these, even our online friends.
