Super Bowl Appetizer: Easy Cheesy Artichoke Bread

The Super Bowl is this weekend! And while my Dad’s (Bay Area) family will be cheering on the 49ers (go 9ers!), I will be hanging out by the food.  I tested out a new easy idea I had from combining a few different recipes and love how it turned out.
Cheesy Artichoke Bread- perfect for a SuperBowl party!This literally takes 5 minutes to whip up and 10 minutes in the oven.  And let me tell you, it’s got just the right amount of cheese and crunch to make you want to eat it all up! Don’t believe how quick it is?  Here’s what you need and how to make it:

Easy Cheesy Artichoke Bread

Serves: 4-6
Simple and delicious appetizer!
Ingredients
  • 1 c. mayo
  • 1 can or jar artichoke hearts, coarsely chopped
  • 1 c of shredded Mozarella and Parmesan cheese (found at Target but you could just do 1/2 c. mozarella & 1/2 c. parmesan)
  • 1/2 tsp minced (jarred) garlic or 1 fresh clove minced
  • 1/2 can chopped water chestnuts
  • 2 loaves of french bread
Instructions
  1. Preheat oven to 400 degrees.
  2. Chop artichoke hearts and water chestnuts.
  3. Combine with mayo, garlic, and cheeses.
  4. Spread over sliced french bread.
  5. Bake for 10-12 minutes until bubbly.

    Artichoke dip is one of my most favorite appetizers! Love the idea of putting it directly on the bread and baking it. I am drooling over this one.

    Thank you! Thank you! Thank you! I forgot all about this recipe until just now. I used to make these all the time for parties about 20 years ago. The recipe is so simple and everyone loved it. These are about to make a comeback at parties again. Oh Yeah!

    I’ve made this for a good 25 + years… Only I do the Green Chili Bread.

    1 loaf French Bread
    OR
    Garlic Bread
    1 can 7oz diced Green Chili’s w/juice
    OR
    1 can 7 oz diced Jalapeno’s a Hotter –
    1 bag 12 oz shredded Mozzarella Cheese
    1/4 cup mayo

    Mix green chili, cheese and mayo.
    Spread on sliced bread and broil until bubbly.

    I broil my bread first, then spread, and re-broil until cheese has melted…
