Hello Thirty Handmade Day’s Readers! It’s Emma from Crafting{E} again and I am SO excited to share this delicious cookie recipe with you today. There are so many different kinds of desserts that are delicious, but there is just something about a fresh baked cookie that is always delicious.
Normally I am more of a chocolate lover myself, but sometimes I find a non chocolate dessert recipe that is delicious. Snickerdoodles are a great example of this. I have always loved snickerdoodles, the delicious cinnamon flavor combined with a chewy melt in your mouth cookie is just the perfect combination.
This recipe that I am sharing today is a take on the classic favorite. These are pretty similar to your average snickerdoodle except for the fact that they are stuffed with delicious cinnamon chips.
Have you ever tried baking with cinnamon chips? They are seriously SO good! They look exactly like chocolate chips except they have a delicious cinnamon flavor. They are perfect in this snickerdoodle recipe and add something special to what is a well-known cookie!
We brought these cookies to dinner with some friends a couple weeks ago and they were a hit. They don’t look like much from the outside, just your average cookie, but the story on the inside is a completely different story!
Chunky Cinnamon Snickerdoodles
Ingredients
- ¾ c butter softened
- ¾ c brown sugar
- ¼ c sugar
- 2 large eggs
- 2 tsp vanilla
- 3.9 oz instant vanilla pudding
- 1 tbsp cinnamon
- 2 c flour
- 1 tsp baking soda
- 2 c cinnamon chips
Instructions
- Preheat your oven to 350 degrees.
- Cream the butter and sugars.
- Next, add the eggs and vanilla and beat until creamy.
- Add pudding mix and cinnamon and beat until combined.
- Then add the flour and baking soda.
- Fold in the cinnamon chips.
- Form into balls and refrigerate for at least 2 hours.
- Bake the chilled cookie dough balls at 350 for 8-12 minutes (these cookies taste best slightly undercooked).
