It’s a rainy day here in L.A. Rainy days= perfect soup day. Can’t get much better than grilled cheese + tomato soup.
But here’s a really super simple soup recipe that I love:
Jorge's Taco Soup
Jorge’s Taco Soup is perfect for a rainy day! Yum!
Servings: 4
Calories: 210kcal
Ingredients
- 1 chicken breast cooked and shredded
- 14 oz chicken broth
- 1 c cooked rice
- ½ c salsa
- 1 avocado
Instructions
- Combine chicken, broth, rice, and salsa and warm.
- Slice and add in 1 avocado.
Notes
Serve with tortilla chips; can add shredded cheddar (or jack/monterey jack) cheese and sour cream too!
