Everyone needs a good brunch recipe, am I right? This triple berry buckle is delicious and goes perfectly with eggs and other traditional breakfast foods. It is an old family recipe that we usually make with just blueberries, this time we decided to change it up a little and use blueberries, raspberries, and blackberries.
It was delicious! It was totally a hit at my house, and it did not last long!
Doesn’t it just look so delicious?! Just looking at these pictures made me want to eat a piece. The combination of the sweet topping with the cake like base creates a basic combination that will leave people asking for more.
The recipe is easy too, simply combine all the ingredients and pop it into the oven!
Triple Blueberry Buckle Recipe
Ingredients
FOR THE BATTER:
- ¾ c sugar
- ¼ c butter
- 1 egg
- ½ c milk
- 2 c flour
- 2 tsp baking powder
- ½ tsp salt
- 2 c berry blend (I used the frozen triple berry blend from Costco but you can use any frozen or fresh berries you have on hand)
FOR THE TOPPING:
- ½ c sugar
- â…“ c sifted flour
- ½ tsp cinnamon
- ¼ c butter softened
Instructions
- Mix together the sugar, butter, and egg.
- Stir in the milk.
- Add dry ingredients to wet ingredients and stir well.
- Toss the berries with a little bit of flour and add them to the batter.
- Place the batter in a greased and floured 9x9 pan.
- Combine the topping ingredients and sprinkle over the batter.
- Bake at 375 for 45 to 50 minutes.
