I’m on a roll with creating easy and healthy slow cooker recipes. I shared my chicken teriyaki and chicken fajitas recipes earlier this year and now I’m back with slow cooker honey garlic chicken. Do you love healthy slow cooker recipes as much as I do?
What I love about this recipe is that it’s sweetened with honey, but it’s not too sweet. Plus the extra flavor from garlic cloves, onion powder, pepper, and red pepper flakes makes it taste every bit as good as Chinese food from our local restaurant (without all the guilt!).
I add snow peas and carrots right to the slow cooker with the chicken because they make it more of a complete meal. All I have to do is scoop rice into my programmable rice cooker and dinner is done.
We like when our veggies cook down and absorb the sauce, but if you like extra crunchy vegetables wait to add them the last 30 minutes of cooking.
Top with sesame seeds for a tiny crunch and serve with rice. YUM.
Easy and Healthy Slow Cooker Honey Garlic Chicken
Ingredients
- 2 lbs boneless skinless chicken breasts
- 8 oz snow peas
- 2 carrots peeled and shredded
- 6 cloves garlic minced
- ¼ c soy sauce
- ¼ c honey
- 2 tbsp sesame oil
- 2 tbsp ketchup
- 1 tsp onion powder
- ¾ tsp salt
- ¼ tsp pepper
- ¼ tsp red pepper flakes
Instructions
- Add all ingredients to slow cooker and cook on "low" setting for 6 hours.
- Shred chicken and stir with sauce in slow cooker.
