Happy Patty’s Snack Mix

Happy Patty's Snack Mix

Top o’ the morning to ya, my friends! St. Patrick’s Day is almost here and I have a fun little (no-bake) snack to share with you! This recipe is what I call a “4, 3, 2, 1″ kind of recipe, with 4 cups of this, 3 cups of that and so on. Not only is it a quick and easy, kid-friendly recipe, but it’s also very adaptable. Here’s what I used, but feel free to make it your own.

Start by lining a baking sheet with a silpat or waxed paper. Then layer 4 cups of Lucky Charms cereal, 3 cups of pretzels & 2 cups of peanuts (I used Spanish peanuts). Using your hands, gently toss so that the ingredients get well mixed together.

In a microwave-safe bowl, place 1/2 lb. (6 cubes) of almond bark (also called vanilla candy coating) and heat, according to package directions, until melted.

Pour melted bark over the cereal mixture and gently toss with a spatula until well coated. Immediately sprinkle 1 cup of green M&M’s over the top and lightly toss.

Let the snack mix sit for 20-25 minutes or until the bark has set and is completely firm.

This little snack could be packaged up all cute like and given to your neighbors, kids’ teachers or kept all to yourself. It’s the perfect combination of sweet & salty, so you would be completely justified in keeping it…HA!
