This one ranks up there with the best of rice dishes. It’s creamy and easy and oh so good! Yum.
Twice this month my family has enjoyed this Creamy Rice Dish at our dinner time meals. When school started this year I made a goal to make dinner every night for 30 days. I had only planned out a few meals and thought the rest of the meals would just come to mind over time. Boy, was I wrong! The hardest part of meal planning is coming up with different side dishes.
My boys are huge fans of Mique’s Stick of Butter Rice and this rice dish is inspired by her recipe. I’m proud to say that my family loves this almost as much!
What I love about easy side dishes like this is even though they take a while to bake, it’s only a few ingredients that I typically have on hand in my pantry. There is also no chopping or mixing and it comes together wonderfully.
This goes along great with any meat like chicken or beef and is even great with pork. Try it with my One Pan Creamy Lemon and Garlic Chicken or Garlic Rosemary Pork Tenderloin. I think it’s actually the onions that makes this dish super savory and yummy. Even if you’re not an onion fan, I encourage you to give this a try!
Creamy Rice
Ingredients
- 1 ½ c Uncooked Rice
- 14 oz Cream Of Chicken Soup
- 14 oz Chicken Stock
- 6 tbsp Butter Sliced
- 1 c French Fried Onions Divided
Instructions
- Preheat oven to 425 degrees.
- In a 9x9 baking dish mix together rice, soup, stock, butter and half cup of the onions.
- Bake covered for 30 minutes.
- Uncover and sprinkle with remaining onions.
- Bake for an additional 30 minutes.
