Caramel Corn

There’s nothing quite like the smell of butter and brown sugar in the air.  Add popcorn to the mix and it is pure gold.  With this simple recipe, you will love not only the smell but the taste of this buttery, sugary, sticky, sweet popcorn.  Caramel corn reminds me of fall and chilly weather.  I don’t love chocolate (I know, I know) but I’ll eat anything and everything caramel.  Because of that, I look forward to this time every year – caramel apples, pecan pie, and of course caramel corn.

How to Make Caramel Corn

While there are lots of ways to make caramel corn, this is a good, quick way! You don’t have to stand over the stove stirring ingredients together and it doesn’t require a candy thermometer.  You simply need to be close to a microwave and will have a tasty treat within minutes! Here’s what you need to make it:

  • popcorn
  • baking soda
  • brown sugar
  • butter
  • corn syrup
  • salt
  • wax paper
  • microwave safe bowl
  • wooden spoon
  • popcorn popper

You can use the microwave to pop your popcorn but we love this popcorn popping machine.  Or if you do use the microwave, use this bowl!

Why do you need baking soda for caramel corn?

It might seem weird to have baking soda in the list of ingredients for this recipe. It makes the caramel corn softer and chewier.  In other words – it won’t break your teeth and will melt in your mouth instead.

How long does caramel corn last?

You mean if you don’t eat it all within the first hour?  Wink, wink.  Fresh is always best but with this recipe, you will only want to keep it for up to four days at most.  To help it last, store it in an airtight container.
If you want to make caramel corn for friends and neighbors (perfect for the holidays!), wrap it up in cellophane bags or cute containers.

Caramel Corn

It will take you under 10 minutes with few simple ingredients to turn popcorn into this sticky, sweet Microwave Caramel Corn!

Ingredients

  • 2 qts popped corn
  • ½ tsp baking soda
  • 1 c brown sugar packed
  • ½ c butter
  • ¼ c corn syrup
  • ½ tsp salt

Instructions

  • Microwave last 4 ingredients on high for 3 minutes or until boiling. 
  • Add 1/2 tsp baking soda and stir well. 
  • Pour over popcorn and stir to coat.
  • Place popcorn in lightly greased 9x13 pan and microwave on high for 30 seconds. Stir.
  •  Microwave 2 minutes. Stir.
  • Microwave 1-2 minutes.
  • Taste test for crunchiness. 
  • Spread on waxed paper to cool.
